I think snickerdoodles are a highly underrated cookie. Add a little of this and a little of that and you can transorm this already lovely cookie into a tasty morsel. My friend makes some tasty butterscotch ones, but I am a sucker for pretty ones. These are rolled in India Tree Sparkling Sugar and are as pretty as they yummy!

Here’s the recipe:

1/2 cup butter, softened

1/2 cup shortening

1 1/2 cups white sugar

2 eggs

2 teaspoons vanilla extract

2 3/4 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon cinammon

(This is the basic recipe after that it’s up to you!)

___________________________________________________________

1/2 cup India Tree Sparkling Sugar (Confetti color)

Preheat oven to 375 degrees F.

Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda, cinnamon and salt. Shape dough by rounded spoonfuls into balls.

Roll balls of dough in sparkling sugar. Place 2 inches apart on ungreased baking sheets slightly flatten the cookie.

Bake 12 to 15 minutes, or until set but not too hard. Remove immediately from baking sheets.
